Sweet Potato Crunch
Ingredients:

Potato mixture:

4 large sweet potatoes (or enough to make 3 1/3 cups of mashed potatoes)

1 cup sugar

1/3 cup melted butter
-
1/4 cup milk
-
1 teaspoon vanilla
-
2 eggs
Topping:
-
1/3 cup melted butter
-
1 cup brown sugar
-
2 teaspoons flour
-
1 cup pecans
Preparation:

Peel and chop sweet potatoes. Place in pot covered in cold water.

Boil potatoes until just fork-tinder.

Drain potatoes and transfer to a large mixing bowl.

Using a hand mixer, mash potatoes just until a thick consistency (do not over-mix).

Measure out 3 1/3 cups to another large mixing bowl, discarding remaining potatoes.

Add the rest of the ingredients listed under "Potato Mixture" and lightly blend.

Transfer the mixture to a medium sized baking dish and set aside.

Topping:

In a medium mixing bowl, combine all the ingredients listed under "Topping".

Using a large fork, mix together the topping ingredients to make a crumble and pour over the sweet potato mixture.

Bake:
350 degrees for approximately 1/2 hour
