COUNTRY STYLE MASHED POTATOES

Ingredients:
  • 5 pounds Yukon gold (yellow) potatoes

  • 2 teaspoons salt

  • 1/3 cup butter

  • 1/3 cup half-and-half

  • 4 ounces cream cheese, softened

  • 1/2 teaspoon pepper

Preparation:
  1. Peel potatoes and cut into 1-inch pieces.

  2. Cover potatoes with cold water in a medium-size pan.

  3. Bring water to a boil using medium-high heat. 

  4. Reduce heat to a medium-low and cook potatoes for approximately 20 minutes or until potatoes are fork-tender.

  5. Drain potatoes and transfer back to pan.

  6. Add all ingredients to potatoes.

  7. Beat at medium speed with a hand-held electric mixer to desired degree of smoothness (do not overbeat).

  8. Serve and enjoy!
