COUNTRY STYLE MASHED POTATOES
Ingredients:

5 pounds Yukon gold (yellow) potatoes

2 teaspoons salt
-
1/3 cup butter
-
1/3 cup half-and-half
-
4 ounces cream cheese, softened

1/2 teaspoon pepper
Preparation:

Peel potatoes and cut into 1-inch pieces.

Cover potatoes with cold water in a medium-size pan.

Bring water to a boil using medium-high heat.

Reduce heat to a medium-low and cook potatoes for approximately 20 minutes or until potatoes are fork-tender.

Drain potatoes and transfer back to pan.

Add all ingredients to potatoes.

Beat at medium speed with a hand-held electric mixer to desired degree of smoothness (do not overbeat).
